Ingredients
2 pounds boneless skinless free-range chicken breast
1 can coconut milk
2 cups broccoli
1 cup mushrooms
1 onion
1 tablespoon curry powder
1 teaspoon minced garlic
1 teaspoon minced ginger
Salt to taste
Instructions
In a large skillet, add coconut milk, chicken, broccoli, mushrooms and chopped onion. Cook on medium high 15 minutes.Add curry powder, garlic, ginger and salt cook over medium low heat for 15 minutes.Garnish with fresh parsley and enjoy!
